This project generates from the collaboration between the wineries Borgogno and Fratelli Serio e Battista Borgogno, and Save the Truffle. It’s an open-air school, and an incredible occasion to experience truffle-hunting in first person, accompanied by a “Trifulau” who will illustrate the importance of safeguarding the woods and the biodiversity of our hills.

You will meet the truffle hunter at the Borgogno Winery. The hunt takes place in the truffle forest, which is located in the middle of the Langhe area, in Barolo, just next to one of the most important cru vineyard: Liste.
Founded in 1761, Borgogno is the most historic winery in Piedmont. Besides this, it also boasts another two unparalleled achievements: in 1861, at the celebratory dinner of the Unification of Italy, a toast was made with Borgogno’s Barolo.
The cellar was founded by Bartolomeo Borgogno, and his son Giacomo registered the brand in 1848, but the destiny of the cellar was determined in 1920 by a genius, Cesare Borgogno. Beyond inventing the first model of wine-distribution in Italy, Cesare was among the first to contribute to Barolo’s fame around the world. He also made the decision that marked the future of the winery: that of leaving 20,000 bottles of every great vintage of Barolo Riserva in the cellar for at least 20 years.
Today this is the great feature that identifies Borgogno: having the greatest historical reserves of Barolo resting in its cellars, just waiting to be opened.
Cesare Borgogno had no children, leaving the winery to his niece Ida Chiavassa and her husband Franco Boschis, followed by the sons Cesare and Giorgio: therefore, five generations of Borgogno were followed by two generations of Boschis.
2008 marks another significant step in Borgogno’s history: the company was taken over by the Farinetti family with a new philosophy: that of not changing anything in terms of production. The following year, an important renovation of the main building was completed which brought it back to its original appearance; the historic cellars of 1761, on the other hand, with respect to tradition, were not modified.
In 2015, other important changes happened: a large renovation of the historic cellars that brought old concrete tanks back to life; the conversion to organic farming; the purchase of 3 hectares in the Tortonese area for the production of Timorasso wine and of 11 ha in Madonna di Como in addition to the original 20 ha.
In order to pursue the philosophy behind organic farming, Borgogno decided to bring this forest back to life, with the purpose of protecting the biodiversity and one of the most important specialties of this area, the White Truffle.
In the mid-nineteenth, Cavalier Francesco Borgogno began producing his own wine, selling it in his wife’s small tavern in Barolo. During his life, he became passionately interested in enhancing the local wines, not just for the sake of his own production, but also to provide, with the help of skilled technicians, better training and education to the local farmers, especially in the terrible period of the late blight. His strong will and his genuine and authentic wine made him one of the best wine producers of the Barolo area.
At the time of his death, he left the family house and cellar to Lodovico Borgogno. In that same house, Lodovico Borgogno passed the art of winemaking and his deep love for his land on to his sons Serio and Battista. When he died, Serio and Battista Borgogno inherited some land and a small farmhouse in Cannubi.
Thanks to their foresight, Serio & Battista Borgogno managed to turn a dream of theirs into reality: that of building their house and their winery on top of Cannubi and buying more vineyards around it for a total of 3 hectares, in the heart of Cannubi. They were able to grasp the great potential of a place that is now renowned worldwide and considered one of the best crus in Barolo.
Save the Truffle is the brainchild of Carlo Marenda, a truffle Hunter, and Edmondo Bonelli, who graduated in Natural Sciences.
They met by chance in 2015 in one of the very last real forests of the lower part of the Langhe area. Carlo was checking the woodland’s conditions at the end of a long, cold winter; Edmondo was there to identify several plants and to analyze the soil.
They immediately discovered they shared many ideas and concerns regarding the protection and development of the truffle, both having the intention to recover old truffle-beds and to plant new truffle-generating plants.
Today, Save the Truffle wants to protect the truffle’s growth, since Carlo and Edmondo are firm believers that this precious fruit should be considered less as a commercial deal but safeguarded, instead, as one of the most important products of this territory. This is especially important in an area that is now part of the Unesco World Heritage and where the White truffle of Alba and the outstanding red wines are driving forces for international tourism.
The partnership of these two characters creates what used to be called “the 2.0 truffle era”, in which the truffle hunter is an ecologist who respects the forest and the naturalist gives a true helping-hand to maintain and protect the biodiversity and natural environments.
